
These well –seasoned cashews are sweet, salty, and crunchy…and oh-so snackable! Everybody raves about them. I often make 10 -12 batches for gifts during the holiday season…maybe even more!

Spiced Christmas Cashews
From “Home for Christmas 2011” by Gooseberry Patch
Ingredients
1 egg white
1 T. water
2 9 ¾ oz. cans salted cashews
1/3 C sugar
1 T. chilli powder
2 t. salt
2 t. ground cumin
½ t. cayenne pepper
Directions
Whisk together egg white and water in a large bowl. Add cashews; toss to coat. Transfer to a colander; drain for 2 minutes. In a separate bowl, combine sugar and spices; add cashews and toss to coat. Arrange in a single layer on a greased 15” x 10” jelly-roll pan. Bake, uncovered, at 250 degrees for 1 ¼ hours, stirring once. Cool on a wire rack. Store in an airtight container. Makes about 3 ½ cups.

These are delicious, spicy with a hint of sweet. I was surprised the sugar flavor came through. My recommendation is to make some and keep them on hand to chase away colds and flu.
Yummy! They look so festive and comforting. The perfect Christmas snack.
They are perfect for this time of year and pretty inexpensive. I did not use name-brand canned nuts but bought 2 14 oz containers over in the produce department. They were the most expensive item totaling $13.96, but there are plenty of plain cashews for snacking too.
