Todays recipe is from Guideposts “The Joys of Christmas 2011″ and submitted by Jenny Landes. (Link will take you to home page. You can find “The Joys of Christmas 2011” on the upper right side – under $10)
The book is full of wonderful Christmas stories, recipes, and a few poems. I highly recommend it.
This recipe is on page 79, along with Jenny’s story.
Stuffed Dates
(Jenny Landes)
Ingredients
1 8 oz bag whole pitted dates
40 whole almonds
10 bacon slices, cut in fourths
Directions
Stuff an almond into each date.
Wrap dates with bacon and secure with toothpick.
Broil in over until bacon is crispy, about 12 minutes.
Makes about 40
Michele’s Notes:
I only made 8 since it is just me.
They took 10 minutes in my oven.
The almonds, dates and bacon all complement each other.
These are an excellent appetizer for any occasion – even the ones that got a little singed were delicious 😉
P.S. I will make these again and update this post with a picture. The ones I took were from a bad angle and the dates just did not look right.
